Chocolate Cheesecake

The last time that I made a cheesecake was over a year ago with my roommates, and my mom on the phone leading us every step of the way. This morning I began my next cheesecake...chocolate, but I eventually came across one little problem: I didn't know how to tell if it was finished cooking. In a panic I called my mom and sister-in-law (the cheesecake queen), but I had no success of making any contact, so I turned to the internet. Every website told me that only the middle would be "jiggly," but the entire cheesecake jiggled like Jello. So I let it cook longer than the instructions said to cook it, but it still wasn't right. Eventually the time came for us to leave for church, so the cheesecake had no choice but to come out and refrigerate. Despite my concerns the cheesecake was a success...so rich and creamy. I am quite pleased with the result!

The Test Run

So we've had this blog for a few months now, but we've never done anything with it. I must admit that I was technologically challenged and couldn't figure it out until today. But the time came for me to learn and it is finally complete.

I guess we could start at the beginning. Garrett and I began dating in high school my freshman year, his sophomore year. Garrett left for UCSB and I went to BYU-I. And then Garrett went to England for a year studying abroad. After a couple of years of long distance we decided to get hitched! Garrett and I were married July 11, 2008 in the Oakland Temple. Since then we've been living in Santa Barbara. Garrett is going to school and I'm working. Garrett will be graduating this summer with a degree in Mechanical Engineering. Then he will be working at a crash-test facility called Xprts.

I visited Garrett while he studied abroad in England last year. We took a trip to Venice and had his mom take some engagement pictures while we were there.
